Sourdough Pizza Crust

      A STAPLE IN MY HOME         YEALDS 4 PIZZAS (SCALE REQUIRED) TIP: BEST TO START EARLY OR NIGHT BEFORE INGREDIENTS:  100 G starter 10 G Salt  375 G WARM WATER  500 G AP FLOUR COMBINE: REST FOR 30 mins after combined with a plastic cover or towel over the bowl. PERFORM STRETCH and FOLDS every 30 MINS for about 2 Hours. (COVER BOWL EACH TIME) Let dough rest until bubbly in WARM area of your house.  Dump onto floured surface & cut into 4 equal pieces. shape all 4 pieces into round dough balls  Place Each Dough Ball into separate dishes (OILED)  Refrigerate.  (DOUGH LASTS 3 DAYS IN FRIDGE) Let dough rest for 1 hour at room temp before baking (VERY IMPORTANT) BAKE AT 500 for 12 - 15 MINS or until nice and GOLDEN on crusts.

      I don't know about you guys, but I have found myself a little too comfortable with the convenience of buying out of season produce from giant corporations for a very, very long time. I used to not bat an eye to it until I started learning how to properly harvest food all year round. This led me to raise an eyebrow as to why we have these items available to us all year round. 

What I have found is that eating certain foods during its peak of the season is both more nutritious and a heck of a lot fresher! Now, not everyone can always spare the time to go to a fresh market or a farmers market, and that's OK! Depending on where you live it can be difficult to find farm-fresh produce! However, I highly recommend supporting your local farmer if you have the opportunity!

The idea of being able to ask questions about your food and where it comes from, and the practices they use...and it keeps your community strong! I love getting up early and going to farmer's markets, and it's a fun thing to do with friends and family!


I also personally love getting out the recipe cards that I have saved all year long, and finally breaking in the new season with all of my favorite seasonal recipes from time and time again. This is how cooking traditions are formed and cherished. I LOVE family recipes...who doesn't?!

Let's Start With Spring

Eat Seasonally in Spring

        
             Spring is one of the most heartfelt times of the year. It's when we are reminded that we are a big part of a world that can be brought back to life after times of darkness. After many cold months, we are now able to roll up our sleeves and gather our seeds to plow our gardens. The grass turns from brown to yellow and green, and flowers are popping up all around us. Our cinnamon teas turn to jade and lavender, and the misty mornings are welcoming and warm. 

                          Spring for me is a time of sweet berries and of course "carrot cakes". This is my favorite time for homemade biscuits and homemade jam. Spring Salads are a staple for lunch, and we can't forget about pickled beets <3 


Summertime Sadness


                     Ok, ok, so it's not my favorite time of year, BUT it's definitely nothing to be sad about. ( cheesy I know) AFTER ALL FIGS AND RASPBERRIES ARE IN SEASON! I have such a sweet tooth, so of course, you know Chocolate Fig cakes, and top that with a raspberry sauce and we are right on the money! 
 
   Summer is also a great time to gift pepper jelly and dry herbs <3 
You can actually use dried herbs for medicinal purposes, and to make nice smelling wands for your sock drawers. 

THE SMELL OF AUTUMN IN THE AIR

Eating Seasonally in Fall
              
                        It may have to do with the fact that I am an autumn baby,  but this time of year really soothes my spirit. Winter Squash and Pumpkin Soups really warm my soul this time of year, and a lot of people can be intimidated by pumpkins, but you can actually cut and cook them <3 
Of course, they make lovely Autumn decorations for your porch, but they are very tasty to cook! 
Don't forget to butter and salt your roasted pumpkin seeds too! Don't throw them out! 


Love Like Winter

  
                Ah, sweater weather. This is the time to wind down and stay indoors with your family or your cat. The dry cellar is full of stock from the seasons before, and it is ready to be used in the winter months. 
The Orange Garland is hanging from your fireplace mantle, and your potato casserole is baking slowly in the oven. Your fresh mint tea is steeping and you're considering finishing off the last bit of pumpkin pie in the refrigerator from the night before. 

This is the best time to gather your seed bank, and take inventory. Draw out plans for your spring garden and fluff out winter beddings to keep you warm.
