Sourdough Pizza Crust

      A STAPLE IN MY HOME         YEALDS 4 PIZZAS (SCALE REQUIRED) TIP: BEST TO START EARLY OR NIGHT BEFORE INGREDIENTS:  100 G starter 10 G Salt  375 G WARM WATER  500 G AP FLOUR COMBINE: REST FOR 30 mins after combined with a plastic cover or towel over the bowl. PERFORM STRETCH and FOLDS every 30 MINS for about 2 Hours. (COVER BOWL EACH TIME) Let dough rest until bubbly in WARM area of your house.  Dump onto floured surface & cut into 4 equal pieces. shape all 4 pieces into round dough balls  Place Each Dough Ball into separate dishes (OILED)  Refrigerate.  (DOUGH LASTS 3 DAYS IN FRIDGE) Let dough rest for 1 hour at room temp before baking (VERY IMPORTANT) BAKE AT 500 for 12 - 15 MINS or until nice and GOLDEN on crusts.

                                                     They Go Fast!

       Whether your in the spirit to rise early and get the kitchen nice and dirty or just wanting a quick and easy snack to impress your brunch guests, this is definitely a fun and easy recipe worth trying! I don't know if you guys like to channel your alter ego when you are in the kitchen, but I definitely channel some woodland princess/cottage fairy vibes. It makes it all the more magical to open my windows and light a candle and play some ambient music throughout the house, whilst completely immersing myself in flour and powdered sugar. 

      Cooking has not always been a past time for me, it's only something I've been practicing for about 2 years now and I just fall in love with the feeling of making something from scratch and by hand! I guess happiness really is homemade? Who knew? I just get so much fulfillment from opening my home to friends and family and sending them home content, with full bellies! 

 

                                          Making the Dough:

           Now depending on who you are, and the level of patients you have this could be the best part of the process for you or the worst! (Don't worry though, I have a nice alternative for you otherwise) If I have enough prep time set aside, I like to knead up a nice fresh batch of croissant dough! (usually the night before)

*There's nothing like daydreaming and singing to your favorite tunes whilst beating away at a batch of sticky dough!*

                                                                                                            Buttery Croissant Dough

  • 1-1/2 cups butter, softened
  • 1/3 cup all-purpose flour
  • DOUGH:
  • 1 package (1/4 ounce) active dry yeast
  • 1/4 cup warm water (110° to 115°)
  • 1 cup warm 2% milk (110° to 115°)
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon salt
  • 3-1/2 to 3-3/4 cups all-purpose flour                                                                                          




  1. In a small bowl, beat butter and flour until combined; spread into a rectangle on a piece of waxed paper. Cover with another piece of waxed paper; refrigerate for at least 1 hour.
  2. In a large bowl, dissolve yeast in warm water. Add the milk, sugar, egg, salt, and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic (yay), about 6-8 minutes.
  3. Roll dough into a 14-in. square. Remove top sheet of waxed paper from butter; invert onto half of the dough. Remove waxed paper. Fold dough over butter; seal edgesRoll into a 20x12-in. rectangle. Fold into thirds. Repeat rolling and folding twice. (If butter softens, chill after folding.) Wrap in plastic; refrigerate overnight.
  4. Unwrap your dough and on a floured surface, shape your dough into a long roll and slice 1-inch section rolls of the dough and lay them on a greased pan. 
  5. Press down/shape the circles of dough flat enough to add the filling. (croissant dough will rise back into shape fast,just continue to flatten it out with your fingers)
 
                               OR!
       ( LOW DISCLOSURE, it's totally fine to just use a can of croissants and follow directions 4 & 5 ) TIME IS MONEY SOMETIMES!

 CREAM CHEESE FILLING

  • 1/2 squeezed lemon
  • 2 tsp. of granulated sugar
  • 1 tsp. of vanilla extract
  • 4 ounces of cream cheese (thawed and slightly melted)

  1. Mix these ingredients very well and spoon and spread the filling into the indentions of your dough! 
  2. Top the top of your cream cheese with your favorite jam! *Strawberry is just a staple in my house*
  3. Cook at 350 degrees for 10-15 minutes 

( If you want to get fancy you can even pre-prepare some homemade strawberry jam! This is super easy and also doesn't usually last long in my home) I'll be happy to share this recipe in the near future!
